A shell variable will override the kpathsea variable. So you can set
	export TEXMFHOME=/some/strange/lib
(or the zsh equivalent) and it will be correctly picked up by the TeX
programs. But the default/origin is defined in texmf.cnf files

	kpsewhich -all texmf.cnf

Usually
	PREFIX/texlive/2020/texmf-dist/web2c/texmf.cnf
	PREFIX/texlive/2020/texmf.cnf
