[tex-live] texinfo not happy with texlive not producing log?

FWIW, TeX Live Utility on the Mac will give you a graphical interface of sorts, but it's really only checkboxes for the profile options and a way to change the install path. You have to enable it via a hidden preference, described in TLU's Help book (read it via the Help menu).
