Yes, that's pretty much exactly what I've done -- the shell
startup scripts look to see what's available and set up the PATH
appropriately.

For my own account, which doesn't use the central startup files, I
can switch between the installs by changing my PATH by hand.  I'm
sure I could also write some little scripts to change people's
PATHs, but it's not that big a deal right now.
