It's not surprising that you can't find the directory if you use "\"s :-}

But all seriousness aside, try "~/Library/TeXShop/Templates" (no quotes).  Also, the mailing list "macosx-tex at email.esm.psu.edu" may be better for questions about TeX that are specific to Mac OS X.  See <http://email.esm.psu.edu/mailman/listinfo/macosx-tex> for details.
