In the *nix world, there are also:

pdfbook  - a shell script that calls pdfjam that creates and executes
the necessary latex/pdfpages job for you

psbook   - part of psutils, that likewise creates signatures for a
booklet.

Both the above start from a finished file (pdf or ps) of the booklet,
regardless of whether these were typeset by latex or converted by
Distiller, printed to a ps file, or whatever.
