They aren't exactly oriented towards LaTeX, but many documentation
projects use CVS or SVN

They require a server to be set up with the repository to which
developers can connect and synchronize their copies.  If that's a
problem, you can start a project on savannah.nongnu.org, sarovar.org
or sourceforge.net (there are probably other hosts around).
