In any case, all this is moot because now I know about --force-platform.
There *is* a way to do what I want, it's just obscure. There need be
no changes.
But there is an outright bug in install-tl; it overrides one's choice of
platform from _inside_ the curses-like UI. Hit 'B' to select a
platform, check x86_64-darwin and uncheck universal-darwin, then return
to the main menu, only to see..."two platforms selected"! It won't even
take a manual override. Surely fixing *this* bug can be done entirely
inside install-tl and has absolutely nothing whatsoever to do with MacTeX.
