[tex-live] TEXMFHOME when using install-tl on a Mac

THis is *anyway* what is happening behind the scenes of the installer.

If you change *any* of the default values, it is not changed in the 
main texmf.cnf file, because that might be updated later on, but
a file 2011/texmf.cnf is created (fromthe installer) and the changed
values are written down there.
