AFAIK ftp.it.debian.org is just the italian mirror of the main Debian
server - Norbert works in Italy and therefore used that as an example.  

You can use any mirror, and testing or unstable as you prefer.

No, this was only for upgrades while it was in experimental.  Now it
should work just as usual: apt-get update or apt-get dist-upgrade.
