Thanks - I did not realize that the drop-down menu lists the valid  
fields.

Mea culpa - apparently each .bib file remembers its own settings. I  
generally have the Cite Key showing but I happened to open the one bib  
file that did not have them on, making me think it was bibdesk's fault.
