I typeset my PhD thesis last year using some other Garamond for 
the text combined with MathTime (i.e. Times Italic) for the maths.  
Certainly not ideal, but workable, if you don't look too closely.

I do recall that I once tried to make a Garamondish mathptm with
fontinst, but it soon became apparent that quite a lot of tuning
would have been needed to adjust the Garamond Italic letters for
proper use in math mode, but I didn't have enough time back then
to investigate that further.

P.S.  Looking at Alan Hoenig's book ("TeX Unbound" at p.326 and p.331,
you can find some examples of Adobe Garamond + MathTime or Euler.
In particular, the Euler version has a rather intersting touch.
